I am a beginner and i have a question is it possible to send data to a specific host with the picdem.net and how does it work? (udp)

Yes it is but getting into network programming on the PIC is a non trivial task. There are several books on the subject including the one that comes with the PICDEM.NET kit call TCP/IP Lean.
