What is the cable for?

6 ft. 2.5mm Stereo Cable (Non-terminated)

Is there a link for the Exercise Book?

Want to read the book or Getting Started guide while kits are being shipped.

External Connector with Three Conductors for Selectable Functions:
-TTL RS232
-Analog IN
-Analog Out
-PWM
-I2C

Notice it says 'selectable' ! so you'd ONLY get ONE of the functions.....
I downloaded the 'board layout' (upper right of ad...) and it lists /shows which function can be assigned to what cable (white or red), green must be ground. So you can get a choice of 2 functions via the cable.

When you get to it it is called 'Quick Guide and Examples Collection'

Guess it is the same thing.

Not been able to find one.
However the examples, will probably be the ones that come with the compiler.
So I'd guess the USB HID scope, serial I/O etc.. However I don't see any
standard example interfacing between USB and I2C, and since they mention
I2C, it's possible they have got a custom example for this.
It's unusual that the manual isn't posted somewhere, but for the moment
I can't see it...

hmm.. from the linked datasheet...

PIC16F1459 has 8K instructions, 1k RAM and runs at 12 MIPS.

Man that's one POWERFUL PIC ! Original PICs only had 30-35 instructions, easy to learn and remember when assembly was popular.
This PIC has to be better than any PC CPU !

yes, I know it's a 'typo'...

What are '8 Internal I/O Pins (5 Can Be Analog)'?

I hope there is a place to solder on an 8 pin header.

goto the webpage
click on 'prototype board layout' ( upper right...)
that will download a single page PDF that shows the PCB and I/O config.

As seen in the picture CCS supplies 2 headers for you.
kinda obvious what I/O they're referring to...
